Fish

Our suppliers of fish specialties are fishermen from Sicily, who fish around the island and hand-process mainly anchovies, and small family breeders from Trentino. In Trentino, they breed trout and char in clean, very cold water from mountain streams, where fish grow much more slowly than in regular commercial farms, and their meat is thus firmer and more compact. They use only natural feed without GMOs and process the fish directly at the place of breeding.
