Tino Paiolo

When young Davide Fiandino took over his father's family farm in the Valle Maira valley, the first thing he did was rename it to Tino Paiolo. When coming up with the name, Davide was inspired by two containers (tinozzo and paiolo) originally used in cheese production. Today, they have been replaced by much larger vats, and Davide's herds of cows and sheep have also grown. With more than 200 animals, he produces typical Piedmontese cheeses for this valley, led by the unforgettable Castelmagno, which ages on wooden boards in the cellars beneath the production facility located in the beautiful Valle di Castelmagno.
