South of Putignano in central Puglia, there is a farm on a hill. It has been standing there for decades, with cows, sheep, donkeys, and both light and dark pigs grazing around. A farm as it should be. And what is more, in the middle of this incredibly pure reality, there is a small dairy that transforms freshly milked milk into great cheeses like burrata, mozzarella, scamorza, or provolone every day. The milk travels exactly 30 meters to the dairy.
