One hundred and twenty goats in the abandoned village of Borgata Podio, led by the Alifredi family, provide excellent milk, from which, not only thanks to careful handling but also good maturation, the jewel of Piedmontese goat cheeses is made. In fresh, medium-aged, and well-aged forms, the cheeses from this truly small reality are always perfectly balanced and charismatic.
