La Servaja

Gian Vittorio Porasso is a man of many faces. A trained architect, a shepherd at heart, a cheesemaker with a passion in his heart, a philosopher of nature. One hundred and twenty goats of the Roccaverano breed are his family, with whom he winters on a farm near Castelnuovo di Ceva in the southern part of Piedmont. In the summer, the whole family moves to the mountains towards Valle Stura to the Paraloup area. His very limited cheese production (no more than 12 kg per day) is an experience for all lovers of mountain goat cheeses.
