La Malga del Re

The hidden mountain village of Bagolino west of Lake Garda has been offering the world a cheese jewel called Bagòss for centuries. From unpasteurized milk with a small addition of saffron, a form similar to gold with a size of about 10 kg is created. Even the Venetians in the 16th century sent for this cheese to ensure that something special was not missing from their table. Gianluca Buccio, with his family and a stable of about 50 cows, produces this gem in 2 variants: a younger and softer one aged for about 1 year, and a three-year-old distinctive and robust Bagòss.
