Brimi, cheese, mozzarella, Trentino Alto Adige

Brimi is the northernmost dairy in Italy, producing mozzarella with German precision and Italian flair. Their cooperative unites hundreds of local farmers. None of them owns more than seven cows, which is why the milk collected from them daily is pampered to the last drop.
