Prosciuttificio Gran San Bernardo
The roasted ham Jambon alla brace is a renowned delicacy in Valle d’Aosta. One of the best is made by Mathieu Cerisey in his mountain prosciuttificio at an altitude of 2,473 meters above sea level. He marinates fatty hams from local pigs in a mixture of honey from mountain meadows, herbs, and local craft beer. Then he slowly steams them all day, and finally roasts them in a wood-fired oven from the surrounding forests, basting them with beer until a crispy crust forms.
